They just feel more comfortable going one way or the other. Some people can go either way comfortably. They are called a "goofy foot" My brother surfs a lot. He's a "goofy foot." No, you know when you see footage of surfers, they are either riding down one side of the wave or the other- facing left or right. As for the surfing question, it's my understanding that they do switch it up, hence that little wiggle thing they do when they run the wave, but again, that's just me.
